Instant breadfruit porridge (from freeze-dried powder)
A hot, filling breakfast in five minutes from freeze-dried breadfruit powder — the ration recipe for relief kits and school kitchens.
Serves 2 · 5 minutes · Breakfast · from CRM JA Charity processing team
Ingredients
- 1/2 cup freeze-dried breadfruit powder
- 2 cups water or milk (or 1 cup each)
- 1 cinnamon stick or 1/2 tsp ground cinnamon
- Pinch of nutmeg
- Pinch of salt
- 2 tbsp condensed milk or brown sugar, to taste
- 1 tsp vanilla (optional)
Method
- Bring the water or milk to the boil with the cinnamon, nutmeg and salt.
- Whisk in the breadfruit powder in a steady stream. Because it is freeze-dried it dissolves at once — no lumps and no cold-water paste needed.
- Simmer 2–3 minutes, stirring, until it thickens to the consistency you like. Add a splash more liquid if it gets too stiff.
- Sweeten with condensed milk or brown sugar, add vanilla, and serve.
Relief-kit version: pack 1/2 cup powder, 1 tbsp powdered milk, 1 tbsp sugar and 1/4 tsp cinnamon in a sealed bag. Empty into 2 cups of boiling water, stir 3 minutes, eat. One bag makes two hot servings and weighs under 100 g.
