Freeze-dried breadfruit (home method)

How to freeze-dry breadfruit at home or at the centre, and how to store it so it keeps for years.

Serves About 1 lb dried from 5 lb fresh · 24–36 hours (mostly unattended) · Preserving · from CRM JA Charity processing team

Method

Prepare

  1. Peel and core the fruit. Cut into 1 cm cubes for cooking, or 3–4 mm slices for snacks. Keep pieces the same size so they dry evenly.
  2. Blanch 3 minutes in salted boiling water, drain and cool. (Blanching sets the colour and makes the pieces rehydrate faster. For raw snack slices you can skip it.)
  3. Spread in a single layer on the freeze-dryer trays. Do not overlap.

Freeze-dry

  1. Run a standard cycle: pre-freeze to about -30 °C, then vacuum-dry with gentle shelf heat. A full load of cubes takes 20–30 hours; thin slices 14–18 hours.
  2. It is done when a piece snapped from the centre of the thickest tray is dry and chalky all the way through with no cold spot. If in doubt, add two hours of extra dry time — moisture left inside is what spoils a batch.

Pack and store

  1. Bag immediately while the room is dry. Fill mylar bags or jars, add a 300 cc oxygen absorber per quart, seal.
  2. Label with contents and date. Stored cool and sealed, freeze-dried breadfruit keeps 10 years or more; an opened bag keeps about a month.
