Breadfruit fritters
Use up ripe or leftover breadfruit in a crisp, spiced batter.
Serves 4 · 25 minutes · Breakfast
Ingredients
- 2 cups cooked breadfruit, mashed (boiled or roast)
- 1 egg
- 1/2 cup flour (breadfruit or wheat)
- 1/4 cup milk
- 1 tsp baking powder
- 1 scallion, chopped
- 1/2 tsp thyme
- Pinch of scotch bonnet, chopped fine
- Salt and pepper
- Oil for frying
Method
- Mix mashed breadfruit with egg, milk, flour, baking powder, scallion, thyme, pepper and salt into a thick batter. If it is too stiff add a little milk.
- Heat 1 cm of oil in a pan over medium heat.
- Drop tablespoons of batter into the oil and flatten slightly. Fry 3 minutes a side until golden and cooked through.
- Drain and serve hot with fried fish, ackee, or on their own with pepper sauce.
Ripe breadfruit makes a sweeter fritter — leave out the pepper, add a pinch of nutmeg and a spoon of sugar.
